Chicken Skewers with Bell Pepper and Cilantro

Ingredients

For the Chicken

  • 4 medium chicken breasts, boneless.
  • 1 or 2 red bell peppers, diced.
  • 2 tablespoons of fresh cilantro, chopped, for garnish.

For the Marinade

  • 1/4 cup of freshly squeezed lemon juice.
  • Zest of one lemon.
  • 2 tablespoons of olive oil.
  • 2 finely chopped garlic cloves.
  • 1/2 chicken bouillon cube or 1/2 teaspoon of salt.
  • Freshly ground black pepper to taste.
  • 1 teaspoon of honey (or brown sugar).
  • 1 teaspoon of cayenne pepper (adjust to taste).

Preparation

  1. Whisk the marinade ingredients together in a small bowl. Next, cut the chicken breasts into cubes and place them in a large bowl. Add the marinade, mix well to coat evenly, cover, and refrigerate for at least 30 minutes or up to 24 hours.
  2. Preheat the grill, skillet, or griddle over medium-high heat. Drain the chicken from the marinade, and soak wooden skewers in water for about a minute. Then, thread the chicken cubes and bell pepper slices onto the skewers, alternating as you go.
  3. Cook for about 5 minutes per side, occasionally basting with the leftover marinade, until fully cooked and slightly charred. Serve immediately with a side of salad, rice, or pasta. Finally, garnish with freshly chopped cilantro, and enjoy!
